Why you’ll love strawberry blondies
Soft and chewy and oh so sweet, these strawberry blondies are bursting with berry flavor in every bite. Decadent white chocolate accents the top of the bar, giving them a strawberries dipped in chocolate aesthetic.
You can mix all the ingredients in just one bowl and bake them up in one 8 x 8 inch baking dish! So easy to make and even easier to clean up!
Recipe Tips for the best strawberry blondies
Do not over bake them. The key to a soft and chewy bar is to pull them out of the oven as soon as they puff up in the center and turn light golden brown around the edges. This is not a secret, but it makes a HUGE difference in the texture of your bar, and I think it also makes them last a little longer too!
Recipe Variations
These bars don’t have to be covered in white chocolate, try using your favorite type of chocolate to drizzle on top! Or you can choose to use none at all.

Stand mixer or hand mixer
parchment paper
8 x 8 inch baking dish
Ingredients
Dough
1/2 cup butter, melted
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 teaspoon pure vanilla extract
1 1/4 cups all purpose flour
¼ cup powdered freeze dried strawberries (or 1 cup whole freeze dried strawberries)
5 - 10 drops red food coloring (optional)
Topping (Optional)
½ cup white chocolate melting chips
How to make strawberry blondies
PREP
If your freeze dried strawberries are whole, add them to a food processor and pulse until they are a fine powder. This should yield about ¼ cup once powdered.
Preheat the oven to 350℉.
Line an 8 x 8 inch pan with parchment paper or grease it.
Make the dough
In a medium bowl, mix together flour, strawberry powder, baking powder and salt.
Add granulated sugar and butter to the bowl of an electric mixer and beat until combined.
Add eggs and vanilla and mix well, scraping down the sides of the bowl.
Add the flour and mix until well combined.
Add a few drops of food coloring and mix just until the dough looks marbled.
Pour the batter into the pan and spread evenly to reach each corner.
Bake
Bake for 25 - 30 minutes or until edges turn golden brown and the blondies look puffy in the center.
Remove from the oven and let cool for at least an hour before adding drizzle.
Make the topping
Add the white chocolate melting chips to a microwave safe bowl and heat them for 30 seconds. Stir and if they are not completely melted, put them in the microwave for another 15 seconds. Repeat until they are melted but be careful not to overheat.
Add the melted chocolate to a sandwich bag and trim the tip of one corner off to create a piping bag. Squeeze the chocolate through the hole to drizzle it over the blondies.
Let the chocolate harden completely before cutting and storing the blondies, at least 1 hour.
How to Store
Store strawberry blondies at room temperature in an air tight container for up to two days, or store in the refrigerator for up to five days. If stored in the refrigerator, let stand at room temperature for 30 minutes, or pop in the microwave for five to ten seconds to warm to room temperature.
You can also freeze strawberry blondies easily. Just place (fully baked and cooled) in an air tight freezer container and store in the freezer for up to three months. Remove from the freezer and place in the refrigerator 24 hours prior to serving.
