Recipe Tips for the best coconut birthday cake blondies

Do not over bake them. The key to a soft and chewy bar is to pull them out of the oven as soon as they puff up in the center and turn light golden brown around the edges. This is not a secret, but it makes a HUGE difference in the texture of your bar, and I think it also makes them last a little longer too!

Recipe Variations

You can skip the sprinkles or the coconut if you prefer something more simple. They will taste just as good!

FAQ

  • Blondies are a fudgy and chewy dessert bar that resemble brownies except they are not chocolate flavored. They are typically flavored with vanilla and brown sugar which gives them a caramel like flavor, however many different flavors and add ins can make blondies unique and exciting!

  • Blondies are very similar to brownies except there is no cocoa powder added to blondies, where that is the main flavor ingredient in brownies.

  • Absolutely! In fact, you can make this recipe even simpler by adding white chocolate chips to the batter as the very last step. Or choose your favorite flavor of chocolate chips.

  • Absolutely! Brown sugar is commonly used in blondies and is what gives blondies their signature caramel flavor, however white sugar works well with flavors like berries or birthday cake, for example, and it tastes just as good!

  • When blondies turn light golden brown around the edges and puff up in the center, they are done. Insert a toothpick or knife into the center and when it comes out clean, they are done.

How to make coconut birthday cake blondies

PREP

Preheat the oven to 350℉.

Line an 8 x 8 inch pan with parchment paper or grease it.

Make the dough

In a medium bowl, mix together flour, baking powder, baking soda, and salt and set aside.

Add granulated sugar and butter to the bowl of an electric mixer and beat until combined.

Add eggs and vanilla and mix well, scraping down the sides of the bowl.

Add the flour mixture and and mix until well combined.

Add the sprinkles and coconut and mix until evenly distributed.

Pour the batter into the pan and spread evenly to reach each corner.

Bake

Bake for 25 - 30 minutes or until edges turn golden brown and the blondies look puffy in the center.

Remove from the oven and let cool for at least an hour before adding drizzle.

Make the drizzle

In a liquid measuring cup, mix together the powdered sugar and water until all lumps have dissolved. The consistency should run off a spoon at a slow pace.

Pour the drizzle over the birthday cake by tilting the measuring cup very slowly until the drizzle pours out in a small line. Then move the measuring cup back and forth across the bars to form a drizzled look.

Let the drizzle harden completely before cutting and storing the blondies, at least 1 hour but 2-3 hours is better.

How to Store

Store coconut birthday cake blondies at room temperature in an air tight container for up to two days, or store in the refrigerator for up to five days. If stored in the refrigerator, let stand at room temperature for 30 minutes, or pop in the microwave for five to ten seconds to warm to room temperature.

You can also freeze coconut birthday cake blondies easily. Just place (fully baked and cooled) in an air tight freezer container and store in the freezer for up to three months. Remove from the freezer and place in the refrigerator 24 hours prior to serving.
