  • 1 cup all purpose flour

  • 1 tablespoon chia seeds

  • 1 teaspoon baking powder

  • ¼ cup grapeseed oil

  • 2 large eggs

How to make chocolate chip baked oats

Prep

Preheat the oven to 350℉. Line an 8 x 8 baking dish with parchment paper. 

Make the batter

In a large bowl, mix together oats, oat flour, baking powder, baking soda, chia seeds, and salt until well combined.

In a large bowl, mix together grapeseed oil, brown sugar, eggs, vanilla extract, and oat milk until well combined.

Add the wet ingredients to the dry ingredients and mix until well combined, scraping down the sides of the bowl as needed.

Add the chocolate chips and mix until evenly distributed.

Add the batter to the baking dish. 

Bake in the oven for about 40-45 minutes or until the top turns light golden brown and a knife inserted in the center comes out clean.


How to Store

Store chocolate chip baked oats at room temperature in the refrigerator for up to five days. Let stand at room temperature for 30 minutes, or pop in the microwave for five to ten seconds to warm to room temperature.

You can also freeze chocolate chip baked oats easily. Just place (fully baked and cooled) in an air tight freezer container and store in the freezer for up to three months. Remove from the freezer and place in the refrigerator 24 hours prior to serving.
