Pumpkin Spice Cake with Cinnamon Swirl
Spice cakes are a big hit in my family and I make it every year, usually Applesauce Spice Cake, but this year I wanted to try something a little different. Don’t get me wrong, the applesauce version is great, but if I can add pumpkin to a recipe I will! And I think I’ve found a new favorite with this Pumpkin Spice Cake with Cinnamon Swirl. It takes like pumpkin pie and would pair well with morning coffee or a scoop of vanilla bean ice cream. I can’t help it, I’m hooked. Don’t leave me alone with a full pan of this!

How to make Pumpkin Spice Cake with Cinnamon Swirl
Ingredients
Cinnamon Swirl
1/2 cup granulated sugar
1 tablespoon ground cinnamon
Cake
2 cups All Purpose Flour
1 teaspoon baking soda
1 tablespoon Pumpkin Spice
1 1/2 cups Dark Brown Sugar
2/3 cup Unsalted Butter (Melted and Cooled)
2 Eggs
1 15 oz. can Pumpkin Puree
2 teaspoons Pure Vanilla Extract
Directions
Prep - Preheat oven to 350° Fahrenheit. Grease a 9 x 13 inch pan with cooking spray or cooking oil and set aside.
Step One - In a small bowl, mix together granulated sugar and ground cinnamon to make the cinnamon swirl. Set aside.
Step Two - In a medium sized bowl, mix together flour, baking soda, and pumpkin spice with a fork. Set aside.
Step Three - In a large bowl, add dark brown sugar and unsalted melted butter and mix together well using a fork. Add eggs, pumpkin puree, and pure vanilla extract to the mixture and mix together well, still using a fork.
Step Four - Add flour mixture to sugar mixture and mix together with a fork.
Step Five - Spread half the batter into the greased 9 x 13 inch pan. It’s okay if the batter is spread a little lumpy. Now add a layer of cinnamon swirl over the first batter layer. Using the blunt end of a fork, trace swirls throughout the batter layer.
Now add the rest of the batter on top of the first layer and spread the batter as best you can - this is a little tricky because the batter will stick to the cinnamon swirl. Smoothing the batter out using a rolling motion helps! Add the remainder of the cinnamon swirl to the top layer of batter and repeat the fork method to swirl the cinnamon sugar throughout the batter (note: press the fork all the way to the bottom of the pan to do this).
Step Six - Place the pan in the preheated oven and bake for 25 - 30 minutes or until you can stick a toothpick into the cake and it comes out clean.
