Potato Leek Soup

Comforting and creamy, this hearty soup is flavored with chicken sausage and dill and makes the perfect meal for a chilly day.

What is Potato Leek Soup?

Potato leek soup is a one pot chunky soup that consists of chicken broth, sausage, potato, white onion, leek, cabbage, carrot, dill, bay leaf, sour cream, and salt and pepper. The potatoes break down into a thick sauce that becomes creamy when the sour cream is added. Simply delicious!

What to serve with Potato Leek Soup

Bread, bread, bread! This soup would pair perfectly served in a bread bowl! I don’t often have any lying around, so I love to serve it with a slice of sourdough toast. Croutons also work great, or your favorite bread.

This soup would also be delicious topped it with sour cream and chives, cheese, or a drizzle of olive oil.

How to Store Potato Leek Soup

Store potato leek soup in an air tight container in the refrigerator for up to five days.

You can also freeze potato leek soup easily. Just place (fully cooked and cooled) in an air tight freezer container and store in the freezer for up to three months. Remove from the freezer and heat it until fully defrosted and and sausage is warmed through in a pot on the stove or in the microwave.

How to Make Potato Leek Soup

Ingredients

  • 4 cups chicken broth

  • 3-4 gold potatoes, diced into 1” cubes

  • 1/2 green cabbage, chopped

  • 1 leek, diced

  • 1 white onion, diced

  • 2 - 4 carrots, diced

  • 1/2 teaspoon dill

  • 1 teaspoon salt (or to taste)

  • 1/2 teaspoon black pepper (or to taste)

  • 1 bay leaf

  • 1/2 cup sour cream

  • 1 pound italian sausage (mild or spicy)

Directions

In a large pot, fry sausage until just cooked. Add chicken broth, potatoes, cabbage, leek, onion, carrot, salt, dill, pepper, and bay leaf to pot. Cook for 1 hour or until potatoes are very soft.

Discard bay leaf. In a separate bowl, combine sour cream with some of the hot soup liquid in an equal ratio. Pour the mixture back into the soup pot and stir, mixing it well.

The soup is ready to serve!

My favorite pairing is with sourdough toast.
