Easy Lime Bread (with Greek Yogurt) Ingredients

Limes - I love baking with limes because they have such a powerful and complex flavor when they are added to baked goods. Limes are tart, sour, bitter, and slightly sweet. Loaded with antioxidants and vitamin C, this tangy fruit also has loads of health benefits.

Low Fat Greek Yogurt - I love to bake with greek yogurt for so many reasons. Yogurt has health benefits that milk or other options do not. packed with protein, calcium, vitamins, and probiotics. Baked goods will turn out dense and moist (yes, I said it!), not to mention the tangy flavor of greek yogurt pairs perfectly with grapefruit in this recipe.

Microplanes are the Best Tool for Zesting - Avoid lumpy chunks of peel in your bread and drizzle by using a microplane to get a very fine grate from the lime peel.

Don’t over mix the batter - This bread is designed to have a lumpy texture. That said, if you over mix your batter, the bread may flatten and become dense. 

Adjust as You Go - With every recipe, I recommend tasting along the way and adjust the amount of any of the ingredient to suit your taste.

Sugar Substitutes - Honey pairs nicely with citrus and thus would make a great substitute for sugar in this loaf.

Dairy Substitutes - Easily substitute the greek yogurt for oatmilk or almond milk at a 1:1 ratio. Easily substitute butter with vegan butter at a 1:1 ratio.

Egg Substitute - Omit the egg and mix together one teaspoon baking soda with one tablespoon vinegar. This mixture will substitute for the egg in this recipe.

Easy Lime Bread (with Greek Yogurt) Recipe 

Ingredients

  • 1 ¾ cups All Purpose Flour

  • ¾ cup White Granulated Sugar

  • 2 teaspoons Baking Powder

  • ¼ teaspoon Salt

  • 1 Egg

  • 1 cup Greek Yogurt

  • ¼ cup Melted Butter

  • 2 teaspoons Lime Zest

  • 1 tablespoon Lime Juice

Topping

  • 2 tablespoons Lime Juice

  • 1 tablespoon Sugar

Directions

Preheat oven to 350 degrees Fahrenheit and grease the inside of a loaf pan with your favorite cooking spray.

Mix dry ingredients together. In a large bowl add flour, sugar, baking powder, and salt. Mix together with a whisk or a fork. 

Make a well in the center of the dry ingredients and set aside. 

Mix wet ingredients together. Add the egg to a small bowl and beat until the yoke and white is mixed together well. Next, add the yogurt, melted butter, lime zest, and lime juice. Mix well. 

Add the wet ingredients to the well in the dry ingredients and fold the dry ingredients into the wet until the dry ingredients are absorbed. Be careful here not to over mix - the batter should appear lumpy, not smooth. 

Scoop batter into loaf pan and smooth out the top of the batter.

Place in the oven and bake on 350 degrees Fahrenheit for 50-60 minutes. Insert a toothpick or a knife into the loaf and if it comes out smooth then the loaf is ready. 

Prepare the topping while the loaf is baking. Mix the lime juice and sugar together and set aside. 

Pour the lime juice mixture evenly over the top of the loaf once the loaf is done baking. Let the loaf cool and absorb the liquid for ten minutes in the pan, then run a knife around the edge of the pan to loosen the bread. Turn the pan over onto a plate or cooling rack to release it from the pan. Flip the bread back upright and let cool completely. 

Slice and store in the refrigerator in an airtight container for up to a week, or store in the freezer for up to three months.
