Cookies 'n Cream Cookie Bars (with Oreos)

I have a confession - I’m an Oreo addict. Anyone relate? Maybe you don’t keep any Oreos in the house, or you put them in the freezer where they are hidden and let yourself have one if you remember their secret hiding spot. Or maybe you just have at it and eat a whole package in one sitting. Well, these cookies and cream cookie bars are packed with delicious Oreos and will have you hiding them before you know it!

So why is it called a bar cookie?

cookies ‘n cream cookie bars are actually a bar dessert rather than a cookie. Cookies are dropped onto a pan in individual serving size mounds, while bar cookies are baked in a baking dish and sliced into individual sized pieces. The flavor outcome is very similar, and I find bar cookies to be even faster and easier than cookies!

Try adding ¼ cup white chocolate chips or dark chocolate chips to make these cookie bars extra chocolate-y!

Why are my cookie bars dry?

If your cookie bars are dry, you may have added too much flour to the batter. These should be more similar to a brownie than a cookie - less flour to liquid ratio. The batter will be thick but not hard to work, with a thickness that is thicker than cake batter and thinner than cookie dough.

To add more moisture to your batter, try adding an additional tablespoon of melted butter until the batter consistency looks thinner.

How to Make Cookies 'n Cream Cookie Bars

Ingredients

  • 1 cup flour

  • 1 teaspoon baking powder

  • 1 teaspoon corn starch

  • ¼ teaspoon salt

  • ⅔ cup granulated sugar

  • 1/4 cup unsalted butter, melted and cooled slightly

  • ¼ cup cream cheese

  • 1 egg

  • 1 teaspoons pure vanilla extract

  • 14 Oreos

Directions

  1. Melt the butter in a pyrex liquid measuring cup in the microwave for about 30 seconds or until melted and let cool slightly. 

  2. Preheat the oven to 350. Line an 8 x 8 pan with parchment paper. Chop oreos to desired size and set aside. 

  3. In a medium bowl, add flour, baking powder, corn starch, and salt and mix until well combined. 

  4. Add the sugar to the melted butter and mix until well combined.

  5. In the bowl of an electric mixer, beat the cream cheese and sugar together until well combined. Add the egg and vanilla and mix well  until smooth. Pour in the butter and mix well, scraping  down the sides with a spatula.

  6. Add the flour mixture and mix until well combined. 

  7. Toss in the Oreos and and mix until distributed evenly. 

  8. Pour the mixture into the parchment lined pan and bake for 20 - 25 minutes, or until the edges become golden brown and the middle puffs up slightly.

  9. Let cool and set in the pan for about 1 hour or until bars are completely cooled.


How to Store Cookies 'n Cream Cookie Bars

Store cookies ‘n cream cookie bars at room temperature in an air tight container for up to two days, or store in the refrigerator for up to five days. If stored in the refrigerator, pop them in the microwave for five to ten seconds to warm them up and they’ll taste like they’re fresh baked!

You can also freeze cookies ‘n cream cookie bars easily. Just place (fully baked and cooled) in an air tight freezer container and store in the freezer for up to three months. Remove from the freezer and place in the refrigerator 24 hours prior to serving.
